Power Packed Blueberry Muffins

I was happy to find this recipe, for a healthy & filling alternative to my typical breakfast routine. A day shift nurse needs breakfast, grab & go + more protein, is all the better! These muffins are delicious, moist, and a great way to start the day– whole grains, protein-rich Greek yogurt, and plenty of fresh blueberries, everything you need to power through! Enjoy!

Ingredients

  • 2 cups all purpose flour
  • 1 cup oats
  • 2/3 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups honey nonfat Greek yogurt
  • 2 large eggs, beaten
  • 4 Tablespoons unsalted butter, melted & cooled
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Directions

  • Preheat oven to 350 degrees
  • Line the muffin tin
  • In a bowl, combine: flour, sugar, oats, baking powder, baking soda & salt
  • In a second bowl, combine: yogurt, eggs, butter & vanilla
  • Mix the two bowl contents together, folding the yogurt mix into the dry & stir to combine
  • Mix in the blueberries
  • Pour mixture into muffin tins, fill to the top
  • Bake 20-25 minutes, until you see a golden top that can spring back when you gently touch

The fresh blueberry juice can be a little messy, but overall these muffins are a treat in the morning! A filling + guilt free breakfast is just the way I prefer to start the day!
