Shout out to my Aunt Whitney for sharing this recipe!! Full disclosure: I have no idea who Tom is but that is how this awesome dip was introduced to me, so… Tom’s Texas Caviar it is! This is such a delicious hearty southwestern dip & oddly enough all the ingredients gross me out, but together they make the most delicious combination!
- 3 cans Blackeye peas, drained & rinsed
- 3/4 cup Italian dressing
- 3/4 cup Picante sauce
- 1/2 cup Vinegar
- 3 cloves garlic, chopped
- 1/2 green pepper, chopped
- 1/2 red pepper, chopped
- 3/4 cup pimento stuffed olives, chopped
- 4 tbsp. Jalapeño pepper, chopped
- 1 bay leaf, chopped
Wash, chop, dice & mix!
Then you’re in for the most delicious treat! I also highly recommend munching with our favorite Trader Joe’s chips- Restaurant Style Tortilla Chips 🙂
