First & foremost, shoutout to my friend Katrina for bringing this recipe into my life!! It was too good not to share with you all & I wanted to make sure I remembered it too! A couple of weeks after Elyse was born she showed up with a big batch of these delicious & productive treats! Since then I have made multiple batches myself and they are the perfect thing every time!

These cookies are a labor of love, lots of ingredients and they make a big batch!! ~48 So either be ready to eat a bunch of cookies, plan to share, or prepare a freezer dough stash 🙂

INGREDIENTS
- 1/4 cup ground flax seed
- 1/4 cup hot water
- 1 cup softened butter
- 1 cup sugar
- 3 eggs
- 1 tbsp vanilla extract
- 1/3 cup brewer’s yeast
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3 cups old fashioned / rolled oats
- 1 cup M&Ms
- 1 cup mini chocolate chips

DIRECTIONS
Preheat oven to 350 degrees
Add hot water to ground flax seed, stir together until mixed & set aside
In an electric mixer, cream- butter, sugar & brown sugar

Add flax seed mixture, flour, brewer’s yeast, baking soda & salt
Mix until well combined
Fold in oats & stir
Once oats are well mixed, add M&Ms & chocolate chips

Place spoonfuls of dough onto a baking sheet
Bake for 10-13 minutes, until the edges are light brown

After removing the cookie sheet from the oven, let the cookies rest for a few minutes,
then move to a wire rack & let them cool completely

If I want to pump extra the next day for an event or something… I will eat 3-4 of these cookies and then the next day I have an extra 6oz + in the morning! Yay!!
