Lately, my most favorite salad is Saladelia’s Greek salad! It is very delicious but kind of a pain to order/pick up, plus $10+ salads add up if you’re craving them multiple times a week…

So in comes my at home version and I must say it actually measured up to the competition!

I meal prepped the salad components and now I’m ready to go all throughout the week! I haven’t yet ventured out enough to attempt their dressing or pita chips- so I purchased a bulk order earlier this week. Additional salad components include- lettuce blend, carrots, cucumber, feta cheese, grilled chicken and pickled onions.

This was my first attempt at pickled onions and I’m happy to say it was very easy & tasty!
Recipe:
- 1/2 cup apple cider / white / red wine -vinegar
- 1 cup warm water
- 1 tablespoon sugar
- 1.5 teaspoons salt
- 1 red onion, thinly sliced
Mix all ingredients together until sugar & salt dissolve, pour over the onion slices and let sit in the refrigerator, batch lasts 2-3 weeks in the refrigerator & can used as a topping for many dishes!

Add ingredients to the plate, as much as your liking & enjoy! A colorful plate is a healthy plate!
