Day Shift nursing requires breakfast — you never know when you’re going to eat again and it takes a lot of energy to take on the day. As much as I wish I was one of those people who loved early mornings, I hate getting up early and every second getting to work is precious. Enter– make ahead breakfast burritos! They are delicious, heat up very quickly and definitely hold you over for most of the morning. 10/10 recommend!

Ingredients
- 8 Large Eggs
- 1/2 cup Heavy Whipping Cream
- 2 tbsp Butter
- 1 lb Bacon
- 7 Low Carb Tortillas
- 1 1/2 cups Cheddar Cheese, shredded
- 1/2 tsp Salt
- 1/2 tsp Pepper

To begin- select your ingredients I kept things simple with: bacon, scrambled eggs, cheese… but feel free to add: ham, sausage, peppers, onions, spinach, tomatoes, avocado, mushrooms, chives, etc. Whatever you would put in an omelet!
Prep your ingredients– scramble your eggs, cook your bacon, etc…
To make the scrambled eggs: Mix cracked eggs, whipping cream, salt & pepper, mix thoroughly and scramble eggs on stove top.

After your ingredients are combined, spoon the mixture down the middle of the tortilla and wrap up into burrito shape, Save some cheese to sprinkle on top…

Now, with baking- you have some options:
- Cover the dish with foil, put in the fridge & bake the next morning… At 350°F bake covered for 15 minutes, then remove foil and bake for 5-7 mins until heated throughout & cheese is melted
- Bake immediately- at 350°F bake for 10-15 minutes or until heated all the way through

For Meal Prep- I cooked the burritos immediately and let them cool. Once cooled, I wrapped them up tightly in Saran Wrap and then packaged them in freezer safe Ziploc bags.
Then, when it was early in the morning time for work I pulled out a burrito wrapped it in a damp paper towel a microwaved for 1 minute, voila!

The burritos keep and reheat really well, it was so nice to have a legit breakfast planned for 2 weeks after a little bit of prep work. These burritos definitely beat a granola bar or peanut butter crackers on the way in! -yikes, must do better!
