If you have ever had the pleasure of enjoying Red Radish Catering, then you know how delicious it is! {link here} I never knew of this magic until the pharmaceutical reps brought it to us at Alliance and it quickly became my favorite! Unfortunately, I haven’t gotten their catering in so long, but the cravings remained the same. So I decided to finally take the time to break down the recipe and figure out my own version & I’m happy to say that: my version didn’t disappoint!

Ingredients
- Mixed baby greens
- Sliced cucumbers
- Shredded carrots
- Mandarin oranges
- Craisins
- French onions
- Sunflower seeds
- Shredded cheddar cheese
- Cherry tomatoes

Carefully wash & clean all produce then mix together! The Salad spinner + Vegetable wash {link here}
is everything when preparing the fresh greens! ๐

Ta-da!

However, the dish is not complete without the Zesty Ranch dressing!
- Hidden Valley Ranch dressing seasoning packet (make according to package instructions) and mix with:
- 1 small carton of feta crumbles
- 1 roasted red pepper
- 1 tsp smoked paprika

Mix the dressing and let sit in the fridge for at least an 1 hour. Also, if you’re making the salad in advance you may want to prep the salad ingredients and package in the fridge separately, then combine before serving, adding the oranges and French onions at the last minute, that way everything tastes crisp and fresh at meal time!

I have seriously never craved a salad or chosen to eat a salad for lunch & dinner for multiple days in a row UNTIL THIS ONE. You must try it!!
